
School cooks from surrounding districts visited McMinnville High School today to learn about cooking-from-scratch culinary skills. Sponsored by the Oregon Dairy and Nutrition Council and the Oregon Department of Education (ODE) Child Nutrition Programs, the event featured training by ODE’s Chef Garrett Berdan, a registered dietitian.
“This fits in so well with our district’s policy on serving wholesome, nutrient-rich meals to our students,” said Cindi Hiatt-Henry, McMinnville School District’s director of Nutrition Services. “Living in Yamhill County farm country gives us a unique opportunity to bring locally sourced fresh food into our school kitchens and create healthy meals from scratch.”
Berdan coached the event participants in menu planning and preparing several recipes while practicing culinary techniques like knife skills and weights and measures. KGW broadcast an interview with Berdan live on the 11 a.m. “Portland Today” show.
